Shaking off excess breader, add fish to hot oil and cook until golden brown. Add fish nuggets and seafood breader to a large, lidded plastic container or brown paper bag and shake to coat. Instead of plain cole slaw, I like to serve my Cajun Fried Catfish with Broccoli Salad, Jalapeño Hushpuppies and Homemade Tartar Sauce (all three recipes coming soon), and of course a tall glass of sweet tea. Heat a minimum of 4 inches of oil in a deep skillet or wide pan to 350 degrees (medium-high heat). In a second shallow bowl, whisk the eggs with a splash of water. Add 1 teaspoon salt, 1/4 teaspoon ground black pepper, and the Old Bay Seasoning. Place 1/2 cup flour and the cornmeal in a shallow dish. Some old recipes call for plain milk, but test kitchens have shown that it’s the acid in buttermilk that does the trick. Set a wire rack over a rimmed baking sheet. The second with the eggs, beaten and the last, the panko and parsley. Set up 3 dredging stations (I use pie plates) and in the first combine the flour, salt, pepper, Creole or Cajun seasoning, Old Bay, paprika, onion and garlic powder. This process is to help remove any earthy or “dirty” taste to the fish. Heat oil in a large skillet over medium high heat. This recipe calls for soaking the fish in buttermilk for 30 minutes to an hour before frying. ![]() In a shallow pie or baking dish, combine the cornmeal and flour with the Creole seasoning, salt, smoked paprika, and black pepper. There was nothing fancy about this meal, in fact, many people might have considered it poor folk’s food, but we didn’t care, we just considered it good home cooking. Heat the oil in a large frying pan with tall sides, or a cast-iron skillet, over medium heat until the temperature reaches 350F, making sure to adjust the heat. I loved it! The best part though was coming home with a big stringer of fish, cleaning them in the backyard and mom preparing to fry them up in the kitchen. ![]() I’ve always been an early bird, so there were times I would wake up around 4 or 5 in the morning on a Saturday and creep into my parent’s room and beg my dad to take me fishing, and most of the time he did. As a young girl, I loved to go fishing with my dad. My grandpa did a lot of hunting and fishing, and when we went to visit my grandparents we could expect to have a good fish fry at least one of the nights we were there. Cajun Fried Catfish is really the same as Southern Fried Catfish, just kicked up with some good ol Cajun spices for added flavor and heat.
